6 whole Quail
Oil, salt & pepper for browning.
3/4 cup good dry cooking wine or dry sherry
2 cups chicken bouillon
2 T. sugar
1 small can mushrooms or 8-10 fresh, sautéed in
butter.
1/4 tsp. poultry seasoning
Pinch of garlic powder.

Directions:
Directions:
After browning quail; drain and place breast down on foil on cookie sheet or in baking dish with lid.
Pour out all but 4-5 T. oil.
Add all other ingredients to skillet; stirring well while bringing to boil.
Pour over quail; sprinkle a few rosemary leaves over all (optional).
Cover all or place lid on baking dish.
Bake at 325º for about an hour.
