2/3 c. extra virgin olive oil
1/4 c. white wine vinegar
2 T whole-grain mustard
1 t. salt
black pepper to taste
1 T (or more) sugar
1/3 c chopped fresh mint leaves
2 ripe plum tomatoes, finely diced

Directions:
Directions:
Whisk the oil, vinegar, salt, mustard, pepper, and sugar together in a small bowl until smooth. Then stir in the mint and diced tomatoes. Serve immediately, or cover and refrigerate for up to one hour.Makes 1.5 cups.
