1/2 cup chopped cauliflower
1/4 cup chopped onion
1 cup (4 oz.) shredded cheddar cheese
1 cup milk
2/3 cup chopped ham
1/4 cup chopped carrots
1/4 cup chopped green pepper
3 eggs
1/2 tsp. salt
Dash nutmeg
Unbaked, chilled pie shell

Directions:

Bake pie shell for 5 minutes at 425º; cool.
While cooling pie crust, cook vegetables in boiling salted water till crisp tender (about 5 mins.); drain.
Layer ham, then vegetables in the pie shell.
Sprinkle cheese over ham mixture.
Combine eggs, milk, salt, dash of nutmeg, pouring over ham/vegetable mix.
Bake @ 375º for 40-45 minutes, or until set.
