1 lb. (or more if you want) mushrooms
2 (10 oz.) packages frozen chopped spinach
1/4 c. chopped onions
1 tsp. salt
1/4 c. melted butter or margarine
1 c. grated cheddar cheese
garlic salt (or garlic powder)

Directions:
Directions:
Remove mushroom stems and saute mushroom caps until brown and tender. Set aside. Cook spinach according to package directions and drain thoroughly. Mix spinach with chopped onions, salt, and melted butter. Spread spinach mixture on bottom of 10" casserole. Add some garlic salt to the cheese and sprinkle 1/2 cup of cheese on spinach. Place mushrooms on top of cheese and spread the rest of the cheese mixture on top. Bake at 350º until cheese on top is melted.

This casserole came to me from my mother and I have found it to be a great vegetable side dish for both family dinners and larger gatherings.
