1 cup sugar

2 cups cold mashed potatoes (make with milk and butter for best results)

¾ cup buttermilk

2 Tbsp butter, melted

1 tsp vanilla

4½ cups all purpose flour

4 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp ground nutmeg

⅛ tsp ground ginger

Make the Dough
In a large mixing bowl, beat together the eggs and the sugar. Add potatoes, buttermilk, 2 Tbsp of butter and 1 tsp vanilla, mix well.

In a small bowl, combine the baking powder, salt, baking soda, nutmeg, ginger, and flour until well combined. Add to the egg mixture and blend well. Cover, refrigerate 1-2 hours.

Fry the Doughnuts
On a floured board, roll out the dough to approximately ½ inch thick. Cut out with a 2½ inch donut cutter, or use a large circle cutter and then cut a smaller circle out of the center.

Using an electric skilled or deep fat fryer with a thermometer, heat the oil to 375. Fry the doughnuts a few at a time, 2 minutes on a side or until golden brown and puffy. Drain on paper towels. Do fry up the donut holes as well!

Ice or Sugar to Finish
Sprinkle with fine sugar or regular granulated sugar when warm. Or if desired, mix up an icing of 2 cups of powdered sugar, 2 Tbsp softened butter, 1 tsp vanilla, and enough milk to make a smooth icing. Dip the top of the doughnuts in the icing, twisting as you remove. Sprinkle with colored sprinkles or chocolate bits or coconut, or press in chopped nuts. Turn into maple bars by adding maple flavoring. Or use commercial chocolate frosting.

You can also make a glaze by making the icing very thin, but it’s better to glaze after they’re cooled.
