1 Tbls. oil
1 Tbls. butter
2 buds garlic, minced
2 shallots, minced
1 c. vodka
1. chicken stock
1 can crushed tomatoes
salt and pepper
1/2 c heavy cream
fresh Basil, 20 leaves shredded

Directions:
Directions:
Put oil and butter in a skillet. saute onions and garlic. Add vodka and cook to reduce to 1/2. Add chicken stock and tomatoes. season with salt and pepper. Bring to a boil and then back to a simmer for a little while. At this point you can refrigerate or freeze for later use. When you want to use it, bring it back to a boil and then to simmer and add the heavy cream. Toss with penne or linguine. Garnish with the shredded basil.

I buy the 3 cheese capellini and boil them up and then sauce them for a quite company meal. serve with garlic bread and salad.
