3 c. semisweet chocolate chips
1/2 c. golden brown sugar (packed)
1/4 c. sugar
2 eggs
2 T. dark corn syrup
1 tsp. instant coffee granules
1 tsp. vanilla extract
1/2 c. flour
1/2 tsp. baking powder

Directions:
Directions:
Melt 1-1/2 cups chocolate chips in heavy small saucepan over low heat. Stir constantly until melted and smooth. Remove from heat.
Beat both sugars, eggs, corn syrup, coffee, and vanilla with electric mixer on low to blend. Increase speed to high for 3 minutes until thickened. Add lukewarm melted chocolate and beat until smooth. Reduce speed to low and add flour and baking powder. Mix in remaining 1-1/2 cups chocolate chips. Refrigerate mixture until firm.
Butter large baking sheets. Drop dough by well mounded tablespoons, spacing evenly. Bake 8 minutes and reverse cookie sheet and continue baking until cracked on top and softly set - about 8 additional minutes.

Option:
For fancier cookies: chill dough for 1 hour, then roll in balls. Roll balls in powdered sugar, and then bake.
