1 lb. crappie filets, cut into fingerlike strips
12 oz. ale (full bodied beer)
1 1/2 cup cornmeal
1 tsp. salt
1 tsp. paprika
1/2 tsp cayenne pepper
1 cup flour
Peanut Oil

Directions:
Directions:
Empty beer into large bowl; add cornmeal, salt, paprika, and cayenne pepper; whish until batter is light and frothy. Cover and refrigerate 1 hour or up to five days.
Heat 2" oil in deep fryer.
While heating oil, dredge fillets in flour, shaking off excess before dipping in beer batter; coat well.
Fry until perfectly golden; drain on paper towels.
Serve with lemon wedges ore. tartar sauce.
