4 4-oz. Salmon Filets, Skin Removed
1 T. lime or lemon juice
1/2 cup panko
1/4 cup flaked coconut
Salt, Pepper to taste
Cooking Sray (PAM)

Directions:
Directions:
Preheat oven to 425º
Place salmon fillets on non-stick baking pan.
Brush with olive oil, then juice.
In shallow pan, combine panko, coconut, salt and pepper; dredge each filet in this mixture; place on baking pan.
Spread any leftover crumbs on top of each filet.
Coat lightly with PAM.
Bake for 12-15 minutes; broil a minute or two to brown crust.
