1 pound of dried navy beans
1 meaty ham bone or two smoked pork hocks
1 large dried bay leaf
2 chubby cloves garlic (minced)
1 tbsp. oil
1 large onion (chopped)
2 carrots, peeled and chopped
1 medium potato peeled and chopped
salt if needed to taste
1/2 tsp. pepper

Directions:
Directions:
Soak beans in a bowl of water with a tbsp. of soda over night. Make sure the water is at least 2 inches above beans.
Drain water off beans and add to at least 8 c. of boiling water. Add ham bone,bay leaf,and cook until bean are almost tender. Add rest of ingredients and cook until all are tender. Taste to see if you want to add more pepper and salt.

Soup can decrease by volume as it cooks. You can always add alittle more water. It is best to season soup after it is done because some hams are more salty then others,
