1/2 c.oil
1 1/2 c.sugar
2 c. flour
1 tsp soda
1/2 tsp.salt
1/2 tsp.baking powder
2 eggs
4 tsp. milk
3 ripe bananas
1 tsp. vanilla
1 cup nuts (optional)

Directions:

Preheat oven to 350º. Mix oil and sugar well with kitchen aid or hand mixer. Stir dry ingredients separately, then add them into the oil and sugar mixture, mixing well. Add next set of ingredients and mix. Stir in nuts if desired. Pour into Pam sprayed full size bread pan. Bake 40 minutes uncovered, then cover with Pam sprayed foil for the remaining 20-35 minutes.

I usually double the ingredients and make two loaves. EVERYONE loves this bread, great to share with friends or neighbors and easy to make.
When my bananas are getting soft, I peel them and store them in a zip lock bag in freezer to use when I am making my next loaf of bread. Let them thaw on counter before making bread.
