PIZZA DOUGH:
1 3/4 cups all-purpose flour, plus extra for dusting
1 tsp. salt
1 tsp. active dry yeast
1 Tbsp. olive oil, plus extra for oiling
6 Tbsp. lukewarm water

TOPPING:
6 tomatoes, thinly sliced
6 oz. mozzarella cheese, drained and thinly sliced
2 Tbsp. shredded fresh basil
2 Tbsp. olive oil
salt and pepper

DOUGH: Sift flour and salt into a bowl. Stir in
yeast. Make a well in the center and pour in oil and water. Gradually incorporate the dry ingredients into the liquid, with floured hands. Turn out dough onto a lightly floured surface and knead for 5 minutes, until smooth and elastic. Return dough to a clean bowl, cover with lightly oiled plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size. Lightly oil a baking sheet. Turn out the dough onto a lightly floured surface and punch down. Knead briefly, then roll out into a round about 1/4 inch thick. Transfer to baking sheet and push up the edges with your fingers to form a small rim.
TOPPING: Arrange the tomato and mozzarella slices over the pizza crust. Season with salt and pepper, sprinkle with basil, and drizzle with the oil.
Preheat the oven to 450º, bake for 20-25 minutes, until golden brown.
