1 red onion
4 zucchini
3 Tbsp. olive oil
1 garlic clove, finely chopped
5 large eggs
4 Tbsp. chopped fresh parsley
salt and pepper

Directions:
Preheat the broiler to high. Thinly slice the onion and dice the zucchini into 1/2-inch pieces. Heat the oil in an oven-proof skillet. Fry the onions, zucchini and garlic gently, stirring occasionally, until softened. Beat the eggs with salt and pepper to taste, then stir into the skillet with the parsley. Cook over low heat for about 10 minutes, until almost set. Place the skillet under the broiler until the top is set and bubbling. Cut the frittata into wedges and serve warm or cold
