4 lb. Pork Tenderloin
2 medium onions (chopped)
1/2 cup celery (diced)
1/4 lb. sliced mushrooms
2 tbsp. butter
1 cup chicken broth (more if needed)
2 tbsp. flour

Directions:
Directions:
Brown roast (uncovered) 325º while making the sauce. In a medium saucepan brown the celery, onions & mushrooms in butter. Add flour, and slowly while stirring add the broth. Stir to thicken. Pour over meat. Continue baking at 325º for 2 hours (covered).
