1 cup softened butter
1 cup sugar
1 egg
2 1/4 cup flour
1/2 tsp. baking soda
dash salt
2 cups flaked coconut

Directions:
Cream in large bowl butter & sugar, Beat in egg. Gradually add flour, soda and salt. Mix well. Stir in coconut. Shape into 2" diameter balls. Last of all roll these rolls into 1 MORE CUP COCONUT. Wrap in plastic wrap tightly. Vera wraps them into one more layer of heavy foil* then freeze or Bake at once.
(Can be frozen up to three months and come great!
For Baking: set out just for a FEW minutes, so that they will cut well. Slice into 1/4" slices. Place 3" apart on ungreased cookie sheets. Top with a pecan half-optional.
Bake 325º 20-25 minutes til lite brown 2 check @ 10 minutes so as not too brown.
Cool on wire racks, carefully taking them off cookie sheets-Fragile so could break
