Ingredients: 2 sticks oleo 2 -3 oz. pkg. cream cheese 2 cup sifted flour
Filling: 2/3 cup coarse cut pecans 2 eggs 1 1/2 cups light brown sugar 2 T melted butter dash salt 1/2 tsp. vanilla

Directions:Crust: Let oleo & cream cheese soften to room temperature. Cream together well & add flour 1/4 cup at a time. Blend thoroughly.after each addition. Put in refrigerator & chill well. 1-2 hours. form cups in small muffin pans with thumb. Press dough against bottom & sides or use Pampered Chef tool. Prepare filling: Sprinkle nuts in bottom of unbaked cups. Beat eggs just enough to mix yolks & whites. Add sugar & gradually & beat well. Add melted butter, salt, & vanilla. Spoon filling over nuts & sprinkle more nuts on top. Don't fill cups quite full. Bake 350º 15 minutes then reduce heat to 250º for 10 minutes. Cool before carefully removing from pan. |

Notes: To make shell easily, use 1 tsp measure for each. Dip lightly in flour to prevent sticking. Also may have to flour fingers when pressing in tassel pan.
