Personal Notes:
Personal Notes:
This recipe is definitely not the normal variety of cashew chicken that you get at a chinese restaurant. It is unique, as far as I know to the Springfield Missouri area. Growing up there and living there until I was in my twenties, I grew accustomed to this, and find myself very irritated when I cannot have what I consider "cashew chicken" anywhere else. I try to get some every time I visit family in MO, and I really don't even think this recipe would be considered chinese!! It's just delicious!
