5 beaten eggs
1 1/8 cup oil
2 1/4 cup sugar
3 tsp. vanilla
3 cups grated zucchini
3 3/4 cups flour
1 1/4 tsp. salt
3 tsp. cinnamon
3 tsp. baking powder
1 1/2 tsp. baking soda

Directions:
Directions:
Combine beaten eggs, oil and sugar. Beat well, add zucchini & vanilla. Add dry ingredients.

Pour into 2 greased 9x5 loaf pans
Bake 350º 1 hour

Zucchini when planted usually was very fruitful. When it first became popular, gardeners would let it get huge-2 feet long and 4-5 inches in diameter. Then there were many who had an abundance of zucchini and the recipes started for anything to add this prolific vegetable into so as not to waste anything. This is a very good Zucchini recipe.
