1 3 lb. chicken, cut into 12 pieces
3 Tbsp. butter
10 potatoes
2-3 yellow onions
1/2 tsp. salt
Dash black pepper
1/2 tsp. paprika
1 tsp. dried thyme
2 bay leaves
2 C. chicken broth
3 Tbsp. coarsely chopped parsley

Rinse chicken and pat dry. In a heavy ovenproof skillet or Dutch oven, melt butter. Brown a few pieces of chicken at a time over medium-high heat until golden on all sides. Remove from pan. Rinse and peel potatoes. Cut into even slices. Place half of the potatoes in bottom of skillet. Peel and slice onions. Layer chicken, onion and potatoes in skillet, ending with potatoes on top. Sprinkle each layer with salt, pepper, paprika and thyme. Crumble bay leaves and sprinkle over top. Add chicken broth and bring to a boil. Cover. Place skillet in oven. Bake, covered, at 350º for about 1 1/2 hours or until potatoes are cooked. Check for doneness by piercing in the thickest part of the thigh. Sprinkle with parsley and serve. Serves 4.
