2 pounds Bulk sausage Sage or Country
1 pound button mushrooms sliced
2 large onions sliced thin
5 cups prepared mashed potatoes
2 cups prepared beef or chicken gravy
8 oz shredded white cheddar cheese
2 Tablespoons minced parsley

Directions:
Directions:
In a large sauté pan cook sausage over medium high heat until well brown.
Remove sausage from the pan with a slotted spoon leaving fat in the pan
Add onion and cook over medium high heat until well caramelized
Add mushrooms and cook until most of the moisture has left the mushrooms
Return sausage to the pan and add prepared gravy; bring to a boil; remove from heat
In a Hotel Pan, place sausage mixture on the bottom
Top sausage mixture with an even layer of mashed potatoes
Cover with cheese and bake in a 375 degree oven until cheese is starting to brown
Garnish with Parsley; Hold warm or serve.
