4 1/4 cup fine flour
1 lb unsalted butter (softened)
1/2 cup sugar
1 tsp vanilla extract
1 egg
pinch of salt
any flavor jam you like
powdered sugar to decorate

Directions:
Directions:
In a large bowl, beat butter and sugar until creamy. Then, beat in the egg and vanilla.
Sift flour and salt into a bowl. Combine with a spoon, then mix the ingredients with your hands to form the dough. (If too soft, add a little flour.) Cover and chill for 30 minutes.
Next, on a flat surface sprinkle some flour and roll out your dough to about 1/8-inch thickness. Using a cookie cutter, cut into circles. Place each cookie slightly apart on a baking sheet. Make the same amount of circles and use a small pipe to remove the center. Preheat oven to 350 F. Bake cookies for 15 min or until lightly golden. Don't remove until completely cooled. Using a spatula, gently remove cookies. Spread 1 tsp of any flavor jam you like onto one slice of cookie (without the hole in it) and press the other slice of cookie (with the hole in it) together to form a sandwich. Sift powdered sugar on the top to decorate. Place on a serving dish.
