1 c. long grain white rice
1/4 c. pine nuts
1/3 c. dried apricots
1/2 medium yellow onion
butter as needed
1 - 1 1/2 c. chicken broth (or water)

Directions:
Directions:
Chop onion fine and cut apricots into small pieces. Brown pine nuts in butter; set aside. Saute onion in butter until soft & almost brown; set aside. Brown rice in butter. Add onion to the rice in a sauce pan. Add chicken broth to rice and onions and simmer 20 minutes. Add nuts & apricots.
