1 1/2 pounds short ribs
2 quarts + 3 cups water
1 oz dried Polish mushrooms
1 large onion sliced thin
3 T butter
1 rib celery sliced thin
2 carrots sliced thin
The white part of 1 leek sliced thin
3 sprigs chopped parsley
1 Bay leaf
2 T flour
Heavy Cream if desired
32 cooked tortellini

In a large kettle combine the short ribs with 2 quarts water & salt to taste. Bring to a boil, skimming off the froth & simmer, covered for 1 1/2 hours til meat is tender. While meat is simmering, in a bowl let the mushrooms soak in 2 cup of the remaining water for 1 1/2 hours. In a saucepan cook onion in the 1 T butter, stirring til softened, stir in the mushrooms with the soaking water & simmer, stirring occasionally for 20 minutes, To the kettle, add the celery, carrots, leek, Parsley, bay leaf & pepper to taste. Simmer 10 minutes or til vegetables are tender. Remove short ribs with a slotted spoon & remove meat from bones & shop into bite size pieces. Return meat to the kettle & discard bay leaf & add mushrooms mixture including any liquid the chopped parsley & salt & pepper. to taste. To thicken soup in a saucepan cook remaining 2 T butter & flour over moderate heat for 3 minutes whisk in the remaining 1 cup water slowly til the mixture forms a paste & then whisk the paste into the soup. (alternately the soup may be thickened by whisking in the cream. Stir in the cooked tortellini. Makes about 10 cups
