2 tbsp. butter
1/3 c. thinly chopped celery
1/3 c. thinly chopped onion.
4 c. peeled russet potatoes, cut into 1/2 inch cubes
3 c. chicken broth (1 more can)
2 c. milk
1.5 tsp. salt.
1/4 tsp. pepper
dash of peprika
2 c. shredded sharp cheddar cheese

Directions:
Directions:
In a large saucepan, melt the butter. Add the celerty and onion and cook over medium heat, stirring frequently, until tender. Add the potatoes and chicken broth. Simmer until the potatoes are tender, about 10 minutes.

Pour the mixture into a blender and blend until smooth. Return to the saucepan. Stir in the milk and seasonings. Heat through. Add the cheese, stirring until melted.

Pour the soup into bowls and garnish with French-fried onion rings or croutons, if desired.
