2 c. all purpose flour
1 1/4 c. sugar
2 t. baking soda
1 t. ground cinnamon
1/2 t. salt
1 apple, cored and shredded
1/2 c. raisins
1/2 c. flaked coconut
1/2 c. chopped pecans
2 c. grated carrots (3-4 medium carrots)
3 eggs
2/3 c. vegetable oil
2 t. vanilla extract

Directions:

Grease 24 muffin cups or line with paper muffin liners. Preheat oven to 350º.
Combine the flour, sugar, baking soda, cinnamon and salt in a large mixing bowl. Stir in apple, raisins, coconut, nuts and carrots until mixed thoroughly. Beat the eggs lightly and combine with oil and vanilla. Add the egg mixture to the dry ingredients and stir just to combine. Do not overmix. Fill the muffin tins 2/3 full with batter. Bake 20-25 minutes or until golden brown.
