3 tbsp. olive oil
1 large onion, chopped
1 large green pepper, sliced (can use red)
1 green chile pepper, chopped (can use canned)
2 cloves crushed garlic (can use jar)
2 tbsp. chile powder
1/2 tsp. cumin
1/4 tsp. oregano
Tabasco suce to taste
2 cups canned tomatoes, drained.

Heat oil and add vegetables and sautee until tender. Stir in spices. Then add tomatoes, and simmer until cooked down to a fairly thick sauce. When entertaining for a crowd, I make the sauce ahead of time and freeze in zip loc bags.

This recipe is for stovetop cooking. Drop the eggs into depressions in the sauce and covers with grated Monterrey Jack cheese. I prefer a mix of melting cheeses and casserole dishes baked at 350º. For best results, heat the sauce first and bake the eggs until cooked.
