1 c. powdered sugar
1 c. granulated sugar
2 large eggs
1 c. vegetable oil
2 t. vanilla
1 T. fresh lemon juice
5 1/4 c. all purpose
1 t. cream of tartar
1 t. baking soda
1/4 t. salt

Beat butter until fluffy; add sugars, beating well. Add eggs, oil, vanilla and lemon juice; beating until blended. Combine flour and next 3 dry ingredients, sift. Add gradually to sugar mixture, beating until blended. Shape dough into 1" balls, roll in sugar and placr 2" apart on baking sheet lined with parchment paper. Bake at 350º for 9-11 minutes or until set. (do not brown) Remove to racks to cool.
