3 Chicken breasts
1 small yellow onion
2 tbps. Butter
1 container half & half
2 tbsp. sherry
2 tsp. dijon mustard
salt & pepper
Fettuccini
Chopped parsley
Grated Parmesan cheese

Directions:
Directions:
Cut chicken into thin strips, chop onion.
Sautee chicken into 1/2 butter until brown, remove.
Sautee onion in remaining butter until golden brown and transparent. Add chicken, sprinkle with flour. Stir to combine.
Add half&half, a little at a time until sauce is smooth and creamy. Cook, stirring from time to time for 10 minutes. Add sherry. Season to taste with mustard, salt & pepper.
Cook fettuccini, drain well.
Put chicken/sauce over fettuccini. Sprinkle with cheese & parsley.
