18 medium tomatoes, peeled and seeded and chopped (about 8C)
2 C minced celery
1 C minced green pepper
1 C finely chopped onion
1/3 C salt
2 C white vinegar
1 1/2 C sugar
1 1/2 tsp mustard seed
1 tsp pepper

Directions:
Directions:
Place vegetables in large bowl, sprinkle salt over. Stir and let stand for 30 minutes. Drain, rinse and drain again.
Bring remainder to boil. Simmer uncovered 15 minutes. Add the vegetables and return to a boil. Put hot relish into hot sterilized pint jars. Cap and process 20 minutes in oiling water bath. Makes 4 pints
