6 medium sized sweet potatoes
6 slices pineapple cut in small pieces
3/4 c. pineapple juice
1/2 c. brown sugar
1/4 c. butter

Directions:
Directions:
Slice sweet potatoes in 1/4 inch slices. Arrange alternate layers of sweet potatoes and pineapple in a wide casserole so that there are 4 layers in all. Combine pineapple juice,brown sugar and butter. Boil 3 minutes, Then pour over sweet potatoes and pineapple. Bake 1 to 1 1/2 hours at 350º to 400º.
