3 cups all-purpose flour
1 pound ricotta cheese
1 egg

Directions:

Mix all ingredients and knead. Let dough stand for 15 minutes. Repeat 2 or 3 times until dough is a consistently smooth texture. Roll into 2 or 3 small loaves.Cut into strips and roll each strip into a long thin rope (about 1/2 inch in diameter.) Cut off small pieces and roll off gnocchi board or fork. Cook in boiling water until tender. This dough freezes well and if frozen does not need to be thawed before cooking.
