1 carton vanilla ice cream
1 graham cracker crust
1/4 c. instant coffee
1 jar chocolate fudge topping
1 c. nuts, chopped

Directions:
Directions:
Set out the vanilla ice cream to soften, enough to stir the instant coffee granules in, mix quickly so it doesn't melt too much. Immediately spoon into the crust and place in freezer. After a couple of hours or so you can either spread the whole pie with the chocolate topping and sprinkle with nuts or you can serve warmed up chocolate topping on individual pieces and then sprinkle with nuts.

I worked out at Rim Rock Inn during the summer of 1977. It was there that I had my first piece of Wilma's Rim Rock Inn Mud Pie! She shared with me how she made it and I have been making it ever since!! It's so good that I usually make two while I'm at it!
