1-1/4 c. brown sugar
1/2 c. oil
1 egg
2 tsp. vanilla
1 c. buttermilk
1 tsp. soda
1 tsp. baking powder
1/2 tsp. salt
1-1/2 c. rhubarb ( cut up)
nuts
2-1/2 c. flour

Topping:
1 tbsp. butter
1/3 c. sugar
1 tsp. cinnamon

Directions:

Mix all the ingredients together and fill each muffin cup about 2/3 full. Sprinkle a little of the topping on each muffin.
Bake at 375º for 25-30 minutes.
