1/4 cup olive oil, red wine vinegar
2 cloves garlic
2 tbsp parsley
pepper
1 flank steak, 1 1/2 lbs, 3/4" thick
2 red peppers
6-8 thin slices proscuitto
2 tbsp parmesan
1 tbsp parsley
basil

Directions:
Directions:
butterfly steak. marinade in oil, vinegar, garlic, parsley, and pepper for 2 hours. seed, roast and peel peppers. lay meat open on foil. place peppers on steak. cover with proscuitto. sprinkle with parmesan and parsley. cover with basil. roll the steak. tie and place in roasting pan. cover with marinade. bake for 30 mins at 350. Baste and let stand for 15 mins.
