1/2 cup minced onion
1/2 cup minced red pepper
splash of olive oil
seafood: white fish, scallops, shrimp
1 1/2 cups chicken broth
1 tin diced tomatoes, drained
zest of 1 lemon
red pepper flakes
2 garlic cloves, minced
1/4 cup chopped Italian parsley
fresh grated parmesan
salt and pepper to taste
linguine cooked al dente according to pkg directions

Warm chicken broth and minced garlic in microwave and set aside. Saute onion and red pepper in olive oil until transparent. Add chicken broth with garlic, diced tomatoes, lemon zest and pepper flakes. Simmer until reduced slightly. Add Italian parsley and salt and pepper to taste. Meanwhile saute seafood in a little olive oil until just barely cooked

Toss the linguine with the sauce and seafood and serve immediately sprinkled with fresh grated parmesan cheese.
