2 large potatoes
1 sweet potato or yam
1/8 cup olive oil
salt
fresh ground pepper
1 garlic clove, minced
juice of 1 lemon
crumbled feta
1/4 cup diced green onion
1/4 cup chopped Italian parsley

Directions:
Directions:
Cube potatoes, toss with oil and season with salt and pepper. Roast @ 400º until cooked and brown approx 45 minutes. Whisk garlic with the lemon juice and add to potatoes. Toss and cool. Mix remaining ingredients, toss with potatoes and serve.
