4 egg whites
pinch salt
8 oz. sugar
1 T. cornstarch
1/2 tsp. lemon juice or vinegar
1/2 tsp. vanilla
whipping cream
strawberries/kiwi (sliced thin)
chocolate shavings

Directions:
Directions:
Preheat oven to 250º. Add salt to egg whites, and beat stiff. Gradually add the sugar, beating continuously until all the sugar is well beaten in, and the mixture is stiff. Fold in the cornstarch and lemon juice.

Scoop mixture on to an aluminum covered oven tray, in a round dish shape. Make a depression in the center, and bring sides up a little. Bake for 1 1/2 hours. When ready to serve Pavlova, pile whipping cream into the depression, and garnish with fresh fruit and/or chocolate shavings.

My girlfriend Jan Hanwright from New Zealand makes this amazing dessert. This is not her recipe as I found this on line, but I've made this and it is almost as good as hers.
