3 Leeks
2 T. Butter
4-6 medium potatoes
48 oz. Chicken Broth
1 1/2 c. Milk
Parsley Flakes
Salt
Pepper
Garlic salt (optional)

Directions:
Directions:
Wash leeks thoroughly. Mince white portion in food processor. Melt butter in a stockpot, add leeks, cook for 5 minutes or until translucent. Peel potatoes and slice thin. Add potatoes to stockpot along with chicken broth. Simmer until potatoes are tender, at least 20 minutes. Put mixture into food processor or use an emulsifying wand to puree mixture. Stir in milk and seasoning and simmer for 15 minutes, stirring occasionally. Add additional seasonings to taste.
