1 c butter, softened
2 c sugar
5 eggs, seperated
2 c plain flour
1 c buttermilk
1 1/2 tsp baking soda
1 c coconut
1 c pecans
1 tsp vanilla

Icing
2 ( 8 oz ) cream cheese, softened
1 c butter, softened
2 lb pkg powdered sugar
2 tsp vanilla

Directions:
Directions:
With a mixer, beat butter and sugar. Add egg yolks. Add flour, soda, buttermilk and vanilla and beat well. Beat egg whites until stiff, add to cake mixture. Fold in coconut and pecans. Grease 2 (9 inch) round cake pans pour batter into pans Bake at 350º for 30 min
Cool cakes and Ice middle and top then sides of cake. Refrigerate until ready to serve
