1/2 tsp. kosher salt
1 tsp. Dijon mustard
1/4 c. white wine, red wine, or sherry vinegar
3/4 c. extra-virgin olive oil

Directions:
Directions:
Combine salt, mustard & vinegar in glass measuring cup. Whisk all with fork until the salt is completely dissolved. Slowly add the oil in a stream while whisking it all together.

This keeps covered at room temperature for one week, (if it lasts that long) or in the refrigerator for up to a month.
