1 c. olive oil
1/4 c. balsamic vinegar
3 T. water
1 envelope Italian Salad Dressing Mix
2 (10 oz.) packages Italian-Blend Salad Greens
2 medium tomatoes, seeded and chopped
1 small red onion, thinly sliced
1 c. crumbled Feta cheese
3/4 c. dried cranberries

optional - 1 cup crushed walnuts served beside the salad after it is prepared (I like to toast mine first quickly in a toaster over for a few minutes)

In a jar combine olive oil, balsamic vinegar, water &
salad mix. Shake well (have a tight lid on the jar). In a beautiful salad bowl combine the salad greens, tomatoes, onion, cheese and cranberries. Toss with dressing when you are ready to serve, using some of the dressing and tasting as you toss until it tastes just right and very lightly coats the salad. Enjoy.

This is a party favorite, the colors are festive and the salad is delicious. A side dish of crushed roasted walnuts set beside the bowl at a party allows diners to add them if they wish.
