2 lbs. shrimp
bay leafs
1 c. onion
1 c. green, red, and yellow pepper
celery
1/2 bunch cilantro
Dash of salt
Dash of pepper
1/2 c. lime juice
Dash of mustard
Dash of tabasco

Directions:
Directions:
Cook the shrimp for 4 minutes in water with onion, salt, celery and bay leaf. Keep the broth. Cut the tomatoes, onion and pepper into very small pieces. Mix the lemon juice with the vegetables, shrimp, mustard and tabasco.
Then add the broth, salt, and pepper to your taste. Top with cilantro.

We were served this ceviche on our Galapagos cruise and the chef shared the recipe with us. Enjoy it!!! Calamari can be substituted for shrimp.

Sprinkle a handful of popcorn on each serving for a added touch.
