3 potatoes
2 rutabagas or turnips
3 carrots
3 parsnips
1 winter squash (butternut, acorn, whatever)
1 T. olive oil
2 tsp. dried basil
1/2 tsp. pepper
3 T. malt vinegar (what they put on fish & chips)
2 T. fresh parsley
2 garlic cloves, minced
1 apple, cored & cubed

Directions:
Directions:
Peel and cube the vegetables. Coat a large roasting pan with cooking spray. Put vegetables and apple in pan. Combine olive oil, basil & pepper and add to vegetables. Stir to coat vegetables evenly. Roast, stirring occasionally, about 45 minutes in a 425º oven. In a large bowl, stir together the vinegar, parsley and garlic. Add the cooked vegetables and toss to combine.

Grandpa and Grandma Summers would have loved this! Not only Grandma's root vegetables, but Grandpa's malt vinegar besides! Whatever vegetables you feel like having work - or whatever is in season. The apple is my addition - I tried it and found it really adds to the flavor of the dish. This is a wonderful potato/vegetable dish to serve with fish. Then my Norwegian blood is really happy.
