2 T. olive oil
1 med. onion, chopped
1 carrot, peeled & chopped
1 bay leaf
1 garlic clove, minced
2 T. brown sugar
pinch of ground cloves
3 c. broth (chicken or vegetable)
2 (28 oz.) cans crushed tomatoes
1/2 tsp. salt
pepper
1/2 c. half-n-half

Directions:
Directions:
Heat olive oil in large saucepan. Add onion, carrot & bay leaf, cook over medium heat until vegetables are soft, about 5 minutes. Add garlic and cook, 1-2 minutes. Add brown sugar and cloves. Stir until vegetables are well coated. Add broth and tomatoes, bring to a simmer. Cover pan, reduce heat to medium low and cook, stirring occasionally, for 30 minutes. Remove pan from heat. Remove bay leaf and discard. Puree soup in a food processor or blender (working in batches) until smooth. Add salt and pepper. Slowly pour in half-n-half, stirring constantly.

This makes about 10 cups and is great to make ahead or to freeze. Do so before adding the half-n-half. It's a little on the sweet side, you can decrease the brown sugar if desired.
