2 cups (1 #) Gooch's 'soup' beans
6 cup water
ham butt or bone
1/2 onion diced fine
2 stalk celery sliced
1-2 carrots diced
2 tsp. salt
1 tsp. pepper
6 more cups water

Directions:
Directions:
1. Clean & wash beans. Place in large pan & add 6 cup water. Bring to boil & 2 minutes, Remove from heat, cover & let stand 1 hour.
2. Return to heat. Add 6 cup more water, meat, vegetables & Spices.Bring to boil. Reduce heat & simmer 2 1/2 hours

NOTE on back of card;
Use 1/2 tsp baking soda per pound of beans add to initial boiling bean water, & cook about 5 minutes, drain off & rinse well & add fresh water.

Also a splash of vinegar can be added (DK) This recipe is from the back of a package of Gooch's beans.
