1/2 c. chopped green onions
2 garlic cloves, minced
1/4 c. margarine, softened
1 1/2 c. uncooked rice
1 tsp. curry powder
3 c. chicken broth
1/2 tsp. salt
1/2 c. raisins
1/2 c. chopped walnuts, toasted

Directions:
Directions:
In a large skillet, saute 1/4 cup of onions and the garlic in margarine until tender. Stir in uncooked rice and curry powder. Saute for 2-3 minutes or until rice is lightly browned. Meanwhile, in a saucepan, heat broth and salt. Pour over the rice mixture; stir. Cover and simmer for 30-35 minutes, or until rice is tender. Remove from heat; stir in raisins, walnuts and remaining onions.

I love this recipe. I usually add twice as much curry powder because I like the flavor. I often eat this as a main dish.
