1 whole chicken, cooked and meat removed and cut up
1 small can of green chili peppers, chopped
1 container of sour cream
4 cups of grated cheddar cheese
Flour tortillas
Enchilada sauce (Las Palmas is my favorite)
Directions:
Directions:
In a large bowl, mix together the chicken meat, chili peppers, about 2 cups of grated cheese and the sour cream. Fill flour tortillas with mixture, roll and place seam side down in a large baking pan. Pour over the can of enchilada sauce. Sprinkle the remaining 2 cups of grated cheese on top. Bake at 350º for 45 minutes.

This takes a little bit of effort, but it's worth it! Use the Las Palmas brand of enchilada sauce if you can find it .... it does make a difference! The more cheese you use, the better.
