1 lb. dried lentils
1 can stewed tomatoes
1/2 c. uncooked rice
1 med. onion, chopped
1 lb. ground beef
1-2 carrots, grated
1 stock celery, chopped
1 can broth (beef or chicken)

Directions:
Directions:
Brown ground beef and onions in large saucepan or Dutch oven. Add remaining ingredients; cover and cook on low for 45-60 minutes, or until lentils are cooked. May need to add water if it's too thick.

Sounds weird I know, but I always serve this with a dollop of ketchup on top!
