3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. ground cinnamon
3 eggs
1 c. vegetable oil
2 1/4 c. white sugar
3 tsp. vanilla
2 c. grated zucchini
1 c. chopped nuts (I use walnuts)

Directions:

1. Grease and add flour to two 8x4" pans, set aside. Pre-heat oven to 325º.
2. Mix flour, salt, baking powder, baking soda, and cinnamon together in a large mixing bowl.
3. Beat eggs, oil, vanilla, and sugar together in a separate bowl. Add the sifted ingredients to the creamed mixture and beat well.
4. Stir in the zucchini and nuts until well combined.
5. Pour batter into prepared loaf pans.
6. Bake 45-60 minutes, or until toothpick or knife inserted into center comes out clean.
7. Cool about 20 minutes before removing from pans.
