1 c. shortening
2 1/3 c. hot applesauce
4 tsp. baking soda
2 c. sugar
3 c. flour
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. nutmeg
1 tsp. salt
1 tsp. vanilla
1 c. raisins
1 c. walnuts, chopped

Directions:
Directions:
In a saucepan, melt shortening in hot applesauce and add baking soda. Remove from heat. In a bowl, combine sugar, flour, spices, salt, vanilla, raisins, and walnuts until well mixed. Add the dry mixture to the applesauce mixture, mixing until thoroughly blended. Pour cake batter into a greased bundt pan. Bake at 350º for 1 hour.

Mom cut this recipe out of the newspaper in 1959, when Oregon turned 100 years old. It was designated the official state cake. I have always loved it and usually mom would make it for my birthday cake!
